Yes, these were inspired by the rosemary almonds from Trader Joe’s, but these use front-door rosemary and are much less expensive. Both stove-top and oven-roasted methods listed below. We chose the former method, as there were many items in the oven at the time, but oven-roasting creates a more even toasty quality.
Stove-top method: In a heavy-bottomed skillet (cast iron preferred) over medium-high, spread nuts in even layer and toss with a little olive oil to coat. Keep stirring or shaking until toasted golden and fragrant, about 3-5 minutes, adding rosemary and sea salt toward the end.
Oven method: Preheat oven to 400 degrees F. Place nuts on a baking sheet in one layer tossed enough olive oil to lightly coat. Bake for 5-7 minutes until golden and fragrant, tossing halfway through. Mix in sea salt and rosemary at end.
