Fennel-Beer Quick Bread

Insanely easy and just the right balance of rye, fennel, beer, and melted butter, which always helps. I made this for a brainstorm session with Carlsberg/Jacobsen brewery when I was a Visiting Researcher at the Nordic Food Lab and I need to make it again!

  • 2 cups flour, sifted (not packed)
  • 1 cup rye flour
  • 3 teaspoons baking powder
  • 1 tablespoon fennel seeds
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 12 ounce can or bottle of dark beer, such as a brown ale
  • 1/4 cup butter, melted

Preheat oven to 375°F.

Sift together all dry ingredients. Add beer and stir with a wooden spoon until incorporated.

Grease a loaf pan and add batter. Pour melted butter over the top.

Bake for 30-45 minutes.
